- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 pound andouille sausage, sliced
- 1 pound chicken thighs, boneless and skinless, chopped
- 6 cups chicken broth
- 2 cups okra, sliced
- 2 bay leaves
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 cups cooked rice
- Chopped green onions for garnish
Anweisungen
- Heat the vegetable oil in a large pot over medium heat.
- Whisk in the flour to make a roux, stirring constantly until it is dark brown.
- Add the onion, bell pepper, celery, and garlic. Cook until softened.
- Add the sausage and chicken. Cook until browned.
- Pour in the chicken broth and add the okra, bay leaves, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper to taste.
- Serve over rice and garnish with green onions.
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- Use fresh okra for the best flavor.
- This dish tastes better the next day as flavors meld.
