- 2 pounds of baby potatoes
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Anweisungen
- Boil the potatoes until tender, about 15-20 minutes.
- Drain and let them cool slightly.
- In a bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, salt, and pepper.
- Cut potatoes into halves or quarters and place them in a large bowl.
- Add the dressing and toss to coat.
- Stir in the chopped parsley.
- Serve warm or at room temperature.
