Delicious and moist zucchini muffins that are easy to make.
Zutaten

- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup chopped nuts (optional)
Anweisungen
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line it with paper liners.
- In a bowl, mix grated zucchini, sugar, oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients.
- Fold in nuts if using.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let muffins cool before serving.
Notes
- Store muffins in an airtight container.
- These muffins freeze well.
- Substitute applesauce for oil for a lighter version.
