- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup blueberries
- 4 ounces cream cheese, softened
- 1/4 cup sugar (for cream cheese filling)
Anweisungen
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the flours, sugar, baking powder, and salt.
- In another bowl, combine milk, oil, and egg.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the blueberries gently.
- In a separate bowl, mix the cream cheese and sugar until smooth.
- Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
