A delicious carrot cake roll filled with creamy cheese frosting.

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Anweisungen
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, sugar, and eggs.
- Add oil and stir until well combined.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Slowly add the dry ingredients to the wet mixture.
- Spread the batter onto a greased baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Let it cool for a few minutes, then roll it in a kitchen towel.
- For the filling, beat cream cheese, powdered sugar, and vanilla until smooth.
- Unroll the cake, spread the filling, and roll it back up.
- Chill in the fridge for 30 minutes before slicing.
Notes
- Make sure the cake is completely cool before filling.
- Store leftovers in the fridge.
- You can add nuts or raisins to the batter if desired.
