- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup grated carrots
- 1/2 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Anweisungen
- Preheat your oven to 350°F (175°C).
- Grease a jelly roll pan and line it with parchment paper.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Add oil, grated carrots, and vanilla to the egg mixture.
- Gradually add the dry ingredients to the wet ingredients.
- Spread the batter evenly in the prepared pan.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Once baked, remove from oven and let it cool slightly.
- Invert the cake onto a clean kitchen towel sprinkled with powdered sugar.
- Roll the cake with the towel and let it cool completely.
- For the filling, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mix until creamy.
- Unroll the cooled cake and spread the cream cheese filling evenly.
- Roll the cake back up without the towel and refrigerate for at least 1 hour before serving.
Notes
- Use fresh grated carrots for the best flavor.
- Refrigerate leftovers for up to 3 days.
- You can add nuts or raisins to the batter if desired.
