  • 1 cup grated carrots

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Anweisungen

  1. Preheat your oven to 350°F (175°C).
  2. Grease a jelly roll pan and line it with parchment paper.
  3. In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs and sugar until light and fluffy.
  5. Add oil, grated carrots, and vanilla to the egg mixture.
  6. Gradually add the dry ingredients to the wet ingredients.
  7. Spread the batter evenly in the prepared pan.

  13. Add powdered sugar and vanilla, mix until creamy.
  14. Unroll the cooled cake and spread the cream cheese filling evenly.
  15. Roll the cake back up without the towel and refrigerate for at least 1 hour before serving.
