Zutaten

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 packages (8 ounces each) cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup water
  • 1/4 cup sugar (for compote)

Anweisungen

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press mixture into the bottom of a springform pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in vanilla extract.
  7. Pour mixture over crust.
  8. Bake for 50-60 minutes until set.
  9. Cool and refrigerate for at least 4 hours.
  10. To make compote, combine berries, water, and sugar in a saucepan.
  11. Cook over medium heat until berries break down, about 10 minutes.
  12. Cool the compote before serving on cheesecake.
