Zutaten

- 2 cups chickpeas, cooked
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 cup coconut milk
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro for garnish
Anweisungen
- Heat oil in a pot over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in garlic and ginger, cooking for 1 minute.
- Add tomatoes, curry powder, cumin, and turmeric. Cook until tomatoes soften.
- Add diced potatoes and cooked chickpeas. Mix well.
- Pour in coconut milk and bring to a simmer.
- Cook until potatoes are tender, about 15-20 minutes.
- Season with salt and garnish with fresh cilantro.
