A festive and delicious Christmas cake roll filled with cream and rolled to perfection.

- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 teaspoon peppermint extract
- Red and green sprinkles for decoration
Anweisungen
- Preheat your oven to 350°F (175°C).
- Grease and line a 15×10 inch jelly roll pan with parchment paper.
- In a bowl, beat eggs and granulated sugar until thick and pale.
- Add vanilla extract and mix well.
- In another bowl, combine flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the egg mixture.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes or until the cake springs back when touched.
- Remove from oven and immediately roll the cake with the parchment paper. Let cool.
- In a bowl, whip heavy cream, powdered sugar, and peppermint extract until stiff peaks form.
- Unroll the cooled cake and spread the whipped cream evenly.
- Roll the cake back up and place seam side down on a serving platter.
- Decorate with red and green sprinkles.
Notes
- Make sure the cake is completely cool before spreading the filling.
- Store leftovers in the refrigerator for up to 3 days.
- You can substitute the peppermint extract with vanilla extract if preferred.
