Zutaten

  • 500g bread flour
  • 350ml water
  • 100g sourdough starter
  • 10g salt
  • 50g dried cranberries
  • 50g walnuts, chopped
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Anweisungen

  1. In a large bowl, mix flour, water, and sourdough starter until combined.
  2. Add salt, cranberries, walnuts, cinnamon, and nutmeg. Mix well.
  3. Knead the dough for 10 minutes on a floured surface.
  4. Place the dough in a greased bowl, cover, and let it rise for 4-6 hours, or until doubled in size.
  5. Shape the dough and place it in a proofing basket.
  6. Let it rise for another 2 hours.
  7. Preheat the oven to 220°C (428°F) with a Dutch oven inside.
  8. Carefully transfer the dough to the hot Dutch oven.
  9. Bake for 30 minutes with the lid on, then 15 minutes with the lid off.
  10. Remove and let it cool on a wire rack before slicing.

Notes

  • Use a mature sourdough starter for best results.
  • Feel free to add other dried fruits or spices.
  • Store in a paper bag for freshness.
