- 1 pre-made pie crust
- 1 cup coconut milk
- 1 cup whole milk
- 3/4 cup sugar
- 3 large eggs
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 1 cup shredded coconut
- 1/4 tsp salt
Anweisungen
- Preheat your oven to 350°F (175°C).
- Place the pie crust in a pie dish and bake for 10 minutes.
- In a saucepan, combine coconut milk, whole milk, sugar, and salt. Heat until warm.
- In a bowl, whisk together eggs and cornstarch until smooth.
- Slowly add the warm milk mixture to the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat until thickened.
- Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the filling into the baked pie crust.
- Bake for an additional 25-30 minutes until set.
- Cool before serving.
Notes
- Chill the pie in the refrigerator for a few hours before serving for best flavor.
- Top with whipped cream for added texture.
- Store leftovers in the refrigerator for up to 3 days.
