A homemade version of Olive Garden’s famous pasta e fagioli soup.

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup small pasta (like ditalini)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Anweisungen
- In a large pot, brown the ground beef over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until softened.
- Stir in the beans, diced tomatoes, beef broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the pasta and cook until tender, about 10 minutes.
- Season with salt and pepper.
- Serve hot, topped with Parmesan cheese.

- You can substitute ground turkey for a leaner option.
- Add more vegetables for extra nutrition.
