A hearty and creamy white chicken chili made in a crockpot.
Zutaten

- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz cream cheese
- 1/2 cup sour cream
- 1 cup shredded cheese (optional)
Anweisungen
- Place chicken breasts at the bottom of the crockpot.
- Add beans, corn, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- When chicken is cooked, shred it with two forks and stir back into the chili.
- Add cream cheese and sour cream, stirring until melted and creamy.
- Serve hot, topped with shredded cheese if desired.
Notes
- This chili can be made ahead and stored in the fridge for up to 3 days.
- Freezes well for up to 3 months.
- Adjust spices to taste.
