- 8 ounces elbow macaroni
- 4 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup chopped green onions
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
Anweisungen
- Cook the elbow macaroni according to package instructions. Drain and let cool.
- In a large bowl, combine chopped eggs, mayonnaise, mustard, vinegar, green onions, and relish.
- Add the cooled pasta to the egg mixture and stir until well combined.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
Notes
- For extra flavor, add paprika on top before serving.
- You can substitute Greek yogurt for mayonnaise for a lighter version.
