- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup cooked rice
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
Anweisungen
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, black beans, corn, salsa, cheese, chili powder, cumin, rice, bell peppers, and onion.
- Transfer mixture to a greased baking dish.
- Spread evenly and top with additional cheese if desired.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Let cool slightly before serving.
