- 2 cups almond flour
- 1 cup coconut flour
- 1 cup maple syrup
- 1/2 cup coconut oil, melted
- 4 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Anweisungen
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together eggs, maple syrup, coconut oil, vanilla extract, and pumpkin puree.
- Combine the wet and dry ingredients.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- This can be served with whipped coconut cream.
- Substitute pumpkin with applesauce for a different flavor.
