- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 cup of diced onions
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
Anweisungen
- Rinse the quinoa under cold water.
- In a pot, bring the vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a skillet, sauté onions, garlic, carrots, and celery until tender.
- Add thyme, rosemary, salt, and pepper to the vegetables.
- Fluff quinoa with a fork and mix in the sautéed vegetables.
- Serve warm.
Notes
- This dish can be made a day ahead and reheated.
- Feel free to add other vegetables like bell peppers or zucchini.
