Anweisungen
- Preheat the oven to 350°F (175°C).
- In a saucepan, whisk together coconut milk, heavy cream, sugar, and cornstarch over medium heat.
- In a separate bowl, whisk egg yolks and vanilla extract.
- Once the mixture thickens, slowly add it to the egg yolks, stirring constantly.
- Add shredded coconut and mix well.
- Pour the filling into the pre-baked pie crust.
- Bake for 25-30 minutes until set.
- Let it cool and refrigerate for at least 2 hours.
- Top with whipped cream before serving.
