A healthy twist on classic nachos using grilled zucchini.
Zutaten
Skala
- 2 medium zucchinis, sliced
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed
- 1/2 cup corn
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- 1 jalapeño, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Anweisungen
- Preheat the grill to medium heat.
- Slice zucchinis and brush with olive oil.
- Sprinkle salt, pepper, and cumin on the zucchinis.
- Grill zucchinis for about 3-4 minutes on each side until tender.
- Remove from grill and arrange on a platter.
- Top with cheese, black beans, corn, tomatoes, onions, and jalapeños.
- Return to grill for 2-3 minutes until cheese melts.
- Serve warm.
