A rich and creamy chicken enchilada casserole with layers of flavor.
Zutaten
Skala
- 2 cups shredded cooked chicken
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese
- 1 can diced green chilies
- 8 corn tortillas
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Anweisungen
- Preheat oven to 350°F.
- In a bowl, mix chicken, cream of chicken soup, sour cream, half of the shredded cheese, green chilies, cumin, garlic powder, salt, and pepper.
- In a baking dish, layer 4 tortillas at the bottom.
- Add half of the chicken mixture on top of the tortillas.
- Layer another 4 tortillas on top of the chicken mixture.
- Add the remaining chicken mixture on top.
- Sprinkle the rest of the cheese over the top.
- Bake for 30 minutes until bubbly and golden.
Notes
- Use leftover rotisserie chicken for a quicker option.
- Top with fresh cilantro before serving.
- Can be made ahead and refrigerated before baking.
