Zutaten

  • 1 cup black-eyed peas
  • 1 cup rice
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper

Anweisungen

  1. Soak the black-eyed peas overnight.
  2. In a pot, sauté onion and garlic until soft.
  3. Add soaked peas, ham hock, water, salt, and peppers.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Add rice to the pot and stir well.
  6. Cover and cook on low for 20 minutes or until rice is tender.
  7. Remove ham hock and shred the meat, then return it to the pot.
  8. Serve warm.
