A delicious Italian pasta salad made with cheese tortellini, fresh vegetables, and a zesty dressing.

- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Anweisungen
- Cook the cheese tortellini according to package instructions. Drain and cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, black olives, bell pepper, and basil.
- Add the cooled tortellini to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables or proteins.
- Best served cold.
- Can be made a day in advance.
