			- 1 whole turkey (10–12 lbs)
- 2 cups jerk marinade
- 4 cups rice
- 2 cups black beans
- 1 cup corn
- 1 cup diced bell peppers
- 1/2 cup chopped scallions
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 cup fresh mango salsa
Anweisungen
- Preheat the oven to 350°F (175°C).
- Rub the turkey with jerk marinade and let it marinate for at least 2 hours.
- Place the turkey in a roasting pan and cover it with foil.
- Roast the turkey in the oven for about 3 hours, basting occasionally.
- Cook the rice according to package instructions, adding black beans and corn towards the end.
- In a separate pan, sauté bell peppers and scallions in olive oil.
- Combine the sautéed vegetables with the rice and beans mixture.
- Serve the turkey with mango salsa on the side.
Notes
- Let the turkey rest for 30 minutes before carving.
- Adjust spices in the jerk marinade to your taste.
- Use leftover turkey for sandwiches or soups.
