Zutaten

- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Anweisungen
- Rinse quinoa under cold water.
- Cook quinoa according to package instructions.
- In a large bowl, combine chickpeas, lemon juice, and olive oil.
- Add cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
- Season with salt and pepper.
- Toss gently to combine.
- Chill in the refrigerator for 30 minutes before serving.

- This salad can be made ahead of time.
- Store leftovers in an airtight container in the fridge.
