- 1 pound red beans
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 smoked sausage, sliced
- 4 cups chicken broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 cups cooked rice
Anweisungen
- Soak the red beans overnight in water.
- Drain and rinse the beans.
- In a large pot, sauté the onion, bell pepper, celery, and garlic until soft.
- Add the sausage and cook until browned.
- Add the beans, chicken broth, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
- Remove bay leaves and serve over cooked rice.
