  • 2 cups of chopped vegetables (carrots, celery, onions)
  • 1 cup of diced potatoes
  • 1 pound of turkey or chicken
  • 2 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of rosemary

Anweisungen

  1. Preheat your oven to 375°F.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped vegetables and sauté until soft.
  4. Add diced potatoes and turkey/chicken to the pot.
  5. Pour in vegetable broth and season with salt, pepper, thyme, and rosemary.
  6. Bring to a simmer and cook for 20 minutes.
  7. Transfer to a baking dish and cover with foil.
  8. Bake for 45 minutes or until the meat is cooked through.
  9. Let it cool, then refrigerate until ready to serve.
