A hearty and flavorful Mexican chicken tortilla soup.

- 2 cups cooked chicken, shredded
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed
- 1 can (4 oz) diced green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
- 1 cup corn (fresh or frozen)
- 1 cup tortilla strips
- 1 avocado, diced
- 1 lime, juiced
- Fresh cilantro for garnish
Anweisungen
- In a large pot, sauté onion and garlic until softened.
- Add diced tomatoes, black beans, green chilies, chicken broth, cumin, chili powder, and salt.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add shredded chicken and corn. Cook for an additional 5 minutes.
- Serve hot, topped with tortilla strips, avocado, lime juice, and cilantro.

- Adjust spices to your preference.
- Use rotisserie chicken for convenience.
- Can be made ahead and stored in the refrigerator.
