A refreshing Mexican corn pasta salad packed with flavor.
Zutaten

- 2 cups of cooked pasta
- 1 cup of corn, canned or frozen
- 1 cup of cherry tomatoes, halved
- 1/2 cup of diced red onion
- 1/2 cup of diced bell pepper
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of lime juice
- 2 tablespoons of olive oil
- Salt and pepper to taste
Anweisungen
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, corn, cherry tomatoes, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add avocado for creaminess.
- Adjust lime juice for more tang.
- This salad can be made a day ahead.
