- 1 lb shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, minced
- Juice of 2 limes
- Salt to taste
Anweisungen
- Boil the shrimp in salted water until pink, about 2-3 minutes.
- Drain and cool the shrimp under cold water.
- In a large bowl, combine tomato juice, cucumber, avocado, onion, cilantro, and jalapeño.
- Add the cooled shrimp to the mixture.
- Squeeze lime juice over the mixture and season with salt.
- Toss everything gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve with tortilla chips for added crunch.
- Adjust the spice level by adding more or less jalapeño.
- Garnish with lime wedges if desired.
