  • 4 cups cooked turkey, shredded
  • 2 cups corn tortillas, cut into strips
  • 1 cup diced tomatoes
  • 1 cup black beans, rinsed
  • 1 cup corn kernels
  • 1/2 cup chopped onion
  • 1/2 cup chopped cilantro
  • 2 cups shredded cheese
  • 1 cup sour cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Anweisungen

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine turkey, tomatoes, black beans, corn, onion, cilantro, chili powder, cumin, salt, and pepper.
  3. Layer half of the tortilla strips in a baking dish.
  4. Add half of the turkey mixture on top of the tortillas.
  5. Sprinkle half of the cheese over the turkey mixture.
  6. Repeat the layers with the remaining ingredients.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  9. Let cool for 5 minutes before serving.
