- 4 cups cooked turkey, shredded
- 2 cups corn tortillas, cut into strips
- 1 cup diced tomatoes
- 1 cup black beans, rinsed
- 1 cup corn kernels
- 1/2 cup chopped onion
- 1/2 cup chopped cilantro
- 2 cups shredded cheese
- 1 cup sour cream
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Anweisungen
- Preheat oven to 350°F (175°C).
- In a large bowl, combine turkey, tomatoes, black beans, corn, onion, cilantro, chili powder, cumin, salt, and pepper.
- Layer half of the tortilla strips in a baking dish.
- Add half of the turkey mixture on top of the tortillas.
- Sprinkle half of the cheese over the turkey mixture.
- Repeat the layers with the remaining ingredients.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Let cool for 5 minutes before serving.
Notes
- This recipe serves 8 people.
- You can use leftover turkey for this dish.
- Feel free to add more spices according to your taste.
