- 2 lbs beef roast
- 2 cups carrots, chopped

- 2 cups beef broth

Anweisungen
- Preheat the oven to 350°F.
- Season the beef roast with salt, pepper, and rosemary.
- Heat olive oil in a large pan over medium heat.
- Sear the roast on all sides until browned.
- Place the roast in a baking dish and surround it with carrots, potatoes, and onions.
- Add minced garlic and pour beef broth over the top.
- Cover with foil and bake for 2 hours.
- Remove the foil and bake for an additional 30 minutes.
- Let the roast rest for 10 minutes before slicing.
- Serve with roasted vegetables.
