Zutaten

  • Salt and pepper to taste
  • 1 cup of red wine
  • 1 cup of beef broth
  • 2 cups of mixed vegetables (carrots, green beans, and potatoes)

Anweisungen

  1. Preheat your oven to 425°F (220°C).
  2. Season the beef with garlic, rosemary, thyme, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef on all sides.
  4. Transfer the beef to a roasting pan and cook for 25-30 minutes.
  5. In the same skillet, add red wine and beef broth, scraping the bottom to release flavors.
  6. Roast mixed vegetables in the oven with the beef for the last 20 minutes.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve with the sauce and roasted vegetables.
