- 2 lbs beef tenderloin
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon rosemary, chopped
- Salt and pepper to taste
- 1 cup red wine
- 2 cups mixed vegetables (carrots, green beans, bell peppers)
Anweisungen
- Preheat the oven to 400°F (200°C).
- Rub the beef with garlic, olive oil, rosemary, salt, and pepper.
- Place the beef in a roasting pan.
- Roast for 25-30 minutes for medium-rare.
- In a saucepan, add red wine and simmer until reduced.
- Steam the mixed vegetables until tender.
- Slice the beef and serve with vegetables and wine reduction.
