Anweisungen
- Preheat your oven to 350°F (175°C).
- Season the beef roast with olive oil, salt, and pepper.
- In a large skillet, brown the roast on all sides.
- Transfer the roast to a roasting pan.
- Add carrots, potatoes, and onion around the roast.
- Pour beef broth over the roast and vegetables.
- Top with rosemary and thyme.
- Cover with foil and roast for 2 hours.
- Remove foil and roast for an additional 30 minutes until golden brown.
- Let rest for 15 minutes before slicing.
