  • 2 lbs of beef roast
  • 1 tablespoon of olive oil
  • 2 cups of carrots, chopped
  • 2 cups of potatoes, cubed
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 cups of beef broth
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • Salt and pepper to taste

Anweisungen

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Brown the beef roast on all sides.
  4. Remove the roast and place it in a roasting pan.
  5. Add carrots, potatoes, onion, and garlic around the roast.
  6. Pour beef broth over the roast and vegetables.
  7. Sprinkle thyme, rosemary, salt, and pepper on top.
  8. Cover the pan with foil and roast for 2 hours.
  9. Remove the foil and roast for an additional 30 minutes.
  10. Let the roast rest for 10 minutes before slicing.
