- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup roasted butternut squash, cubed
- 1/2 cup cranberries
- 1/4 cup pecans, chopped

Anweisungen
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa, reduce heat, and simmer for 15 minutes.
- In a large bowl, combine roasted butternut squash, cranberries, pecans, and quinoa.
- Drizzle with olive oil and sprinkle with thyme, salt, and pepper.
- Toss gently to combine.
- Serve warm.
