A simple and flavorful one pot Mexican rice casserole packed with beans, corn, and spices.

- 1 cup rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tablespoon taco seasoning
- 1 cup shredded cheese
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Anweisungen
- Heat olive oil in a large pot over medium heat.
- Add rice and toast for 2-3 minutes.
- Stir in black beans, corn, diced tomatoes, vegetable broth, taco seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked.
- Stir in shredded cheese and let melt before serving.
Notes
- Adjust spice level by adding more or less taco seasoning.
- Can substitute brown rice for white rice, adjust cooking time.
- Top with fresh cilantro for extra flavor.
