Zutaten

- 2 pounds oxtail
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Anweisungen
- Season oxtail with salt and pepper.
- In a large pot, brown oxtail on all sides.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Stir in tomatoes, beef broth, bay leaves, and thyme.
- Bring to a boil, then reduce heat and simmer for 3 hours.
- Remove bay leaves and serve hot.
