- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and add black beans, corn, bell pepper, cumin, paprika, salt, and pepper.
- Mix well and garnish with cilantro before serving.
Notes
- This dish can be served warm or cold.
- Use any seasonal vegetables you prefer.
- Store leftovers in an airtight container for up to 3 days.
