Zutaten

- 1 cup cooked quinoa
- 1 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 1/2 cup milk or plant-based milk
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Anweisungen
- Preheat oven to 350°F (175°C).
- In a bowl, mix quinoa, flour, baking powder, baking soda, and salt.
- In another bowl, whisk together honey, milk, oil, eggs, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Pour batter into greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
