			- 2 cups carrots, chopped
 - 2 cups Brussels sprouts, halved
 - 2 cups sweet potatoes, cubed
 - 1 cup red onions, sliced
 - 3 tablespoons olive oil
 - 1 teaspoon salt
 - 1 teaspoon pepper
 - 1 tablespoon rosemary, chopped
 
Anweisungen
- Preheat your oven to 425°F (220°C).
 - Prepare the vegetables by washing and chopping them.
 - In a large bowl, toss the vegetables with olive oil, salt, pepper, and rosemary.
 - Spread the vegetables evenly on a baking sheet.
 - Roast the vegetables for 25-30 minutes, stirring halfway through.
 - Remove from the oven and serve warm.

- You can add other vegetables like parsnips or squash.
 - For extra flavor, add garlic or balsamic vinegar.
 - Store leftovers in an airtight container in the fridge.
