A delicious strawberry rhubarb pie that combines sweet strawberries with tart rhubarb in a flaky crust.

- 2 cups strawberries, sliced
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 pie crust, for bottom
- 1 pie crust, for top
Anweisungen
- Preheat the oven to 425°F (220°C).
- In a bowl, mix strawberries, rhubarb, sugar, cornstarch, vanilla, and lemon juice.
- Pour the fruit mixture into the bottom pie crust.
- Dot with butter.
- Cover with the top pie crust and seal the edges.
- Cut slits in the top crust for steam to escape.
- Bake for 15 minutes in the preheated oven.
- Reduce temperature to 350°F (175°C) and bake for an additional 30-35 minutes.
- Let it cool before serving.

- Use fresh strawberries and rhubarb for best flavor.
- Let the pie sit for a few hours to set.
