  • 2 medium delicata squashes
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Anweisungen

  1. Preheat your oven to 400°F (200°C).
  2. Cut the delicata squashes in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the squash halves and season with salt and pepper.
  4. Place the squashes cut side down on a baking sheet and roast for 25-30 minutes.
  5. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  6. Add bell pepper, corn, black beans, cooked quinoa, cumin, salt, and pepper. Mix well.
  7. Remove the squash from the oven and flip them cut side up.
  8. Fill each squash half with the quinoa mixture.
  9. If using, sprinkle cheese on top of the filled squashes.
  10. Return to the oven and bake for an additional 10-15 minutes.
