- 2 medium delicata squashes
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Anweisungen
- Preheat your oven to 400°F (200°C).
- Cut the delicata squashes in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the squash halves and season with salt and pepper.
- Place the squashes cut side down on a baking sheet and roast for 25-30 minutes.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add bell pepper, corn, black beans, cooked quinoa, cumin, salt, and pepper. Mix well.
- Remove the squash from the oven and flip them cut side up.
- Fill each squash half with the quinoa mixture.
- If using, sprinkle cheese on top of the filled squashes.
- Return to the oven and bake for an additional 10-15 minutes.

- Serve warm as a main or side dish.
- Customize the filling with your choice of vegetables or protein.
- Store leftovers in an airtight container in the fridge for up to 3 days.
