- 1 whole duck (about 5–6 pounds)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 orange, quartered
- 1 onion, quartered
- 4 cloves garlic, minced
- Fresh herbs (thyme, rosemary)
- 1 cup chicken broth
Anweisungen
- Preheat your oven to 350°F (175°C).
- Remove the giblets from the duck and pat the duck dry with paper towels.
- Rub the duck with olive oil, salt, and pepper.
- Stuff the cavity with orange, onion, garlic, and herbs.
- Place the duck on a roasting rack in a roasting pan.
- Pour chicken broth into the pan.
- Roast the duck for about 2 hours, basting occasionally.
- Check the internal temperature; it should reach 165°F (74°C).
- Let the duck rest for 15 minutes before carving.
