Zutaten

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in kale, cranberries, walnuts, olive oil, garlic powder, salt, and pepper.
- Cook for another 5 minutes until kale is wilted.
- Serve warm.
Notes
- Quinoa can be substituted with rice.
- Add more vegetables for extra nutrition.
- Store leftovers in the refrigerator for up to 3 days.
