- Brussels sprouts – 1 lb
- Olive oil – 2 tbsp
- Garlic – 4 cloves, minced
- Carrots – 4, sliced
- Green beans – 1 lb
- Almonds – 1/2 cup, sliced
- Quinoa – 1 cup, cooked
- Cranberries – 1/2 cup, dried
Anweisungen
- Preheat your oven to 400°F.
- Toss Brussels sprouts with olive oil and garlic.
- Spread Brussels sprouts on a baking sheet.
- Roast for 20-25 minutes until golden.
- In a pan, sauté carrots and green beans until tender.
- Add almonds to the pan and toast for 2-3 minutes.
- Mix cooked quinoa with dried cranberries.
- Serve all sides together on a large platter.
