- 2 cups of cooked quinoa
- 1 cup of roasted sweet potatoes, diced
- 1 cup of black beans, drained and rinsed
- 1/2 cup of corn, frozen or canned
- 1 red bell pepper, diced
- 1/4 cup of fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Anweisungen
- Preheat oven to 400°F (200°C).
- In a large bowl, combine quinoa, sweet potatoes, black beans, corn, bell pepper, and cilantro.
- Add lime juice and mix well.
- Season with salt and pepper.
- Transfer the mixture to a baking dish.
- Bake for 20 minutes or until heated through.
Notes
- Can substitute quinoa with rice or farro.
- Add avocado for extra creaminess.
- Great as a side or main dish.
