A delicious vegetarian main dish for Thanksgiving.
Zutaten
Skala
- 2 cups of cooked quinoa
- 1 cup of chopped kale
- 1 cup of diced butternut squash
- 1 cup of cooked black beans
- 1/2 cup of chopped walnuts
- 1/2 cup of dried cranberries
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of ground cinnamon
- 1 tablespoon of maple syrup
Anweisungen
- Preheat the oven to 400°F (200°C).
- Toss butternut squash with olive oil, salt, pepper, and cinnamon.
- Spread the squash on a baking sheet and roast for 25 minutes.
- In a large bowl, combine quinoa, kale, black beans, walnuts, and cranberries.
- Add the roasted squash to the bowl.
- Drizzle with maple syrup and mix well.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Substitute walnuts with pecans if desired.
- Adjust spices according to your taste.
