- 8 oz elbow macaroni
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Anweisungen
- Preheat the oven to 350°F (175°C).
- Cook the macaroni according to package instructions.
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning, black beans, corn, and diced tomatoes to the beef.
- Mix in the cooked macaroni and sour cream.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
Notes
- For a spicier version, add jalapeños.
- You can use ground turkey as a healthier option.
- This dish can be made ahead and stored in the fridge.
