- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped kale
- 1/2 cup cranberries
- 1/4 cup pecans
- 1/4 cup feta cheese
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- Salt and pepper to taste
Anweisungen
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in chopped kale, cranberries, and pecans.
- In a small bowl, whisk olive oil, maple syrup, salt, and pepper.
- Drizzle dressing over the quinoa mixture and toss to combine.
- Top with feta cheese before serving.
Notes
- Adjust the sweetness by adding more or less maple syrup.
- Can be served warm or cold.
